    Abstract: This book presents Urbal, an approach that applies impact pathway mapping to understand how food system innovations in cities, and their territories, change and impact food system sustainability. Around the world, people are finding innovative ways to make their food systems more sustainable. However, documenting and understanding how these innovations impact the sustainability of food system can be a challenge. The Urban Driven Innovations for Sustainable Food Systems (Urbal) methodology responds to these constraints by providing innovations with a simple, open-source, resource-efficient tool that is easily appropriated and adaptable to different contexts. Urbal is designed to respond to the demands of field stakeholders, whether public or private, to accompany and guide them in their actions and decision-making with regard to sustainability objectives. This book presents this qualitative and participatory impact assessment method of food innovations and applies it to several cases of food innovation around the world, including the impact of agricultural districts in Milan, chefs and gastronomy in Brasilia, e-commerce in Vietnam, eco-friendly farm systems in Berlin and the Nourish to Flourish governance process in Cape Town. The book demonstrates how food innovations can impact different dimensions of sustainability, positively and negatively, and identify the elements that facilitate or hinder these impacts. The volume reflects on how to strengthen the capacity of these stakeholders to disseminate their innovations on other scales to contribute to the transition towards more sustainable food systems.     Abstract: Maternal and infant nutrition has been on the global agenda as central to health, sustainable development, and progress in low- and middle-income countries. Micronutrients, which play a major role in the metabolism of macronutrients, cellular metabolism, and organ development of the fetus, are important for maintaining pregnancy and fetal growth. Besides, during pregnancy, there is an elevated demand for micronutrients, the excess or deficiency of which can result in an increased risk of pregnancy complications and adverse birth outcomes. As China is a rapidly developing country with a large population, micronutrient status and its influence on maternal and infant health have always been a concern. This Special Issue aimed to estimate the influence that micronutrients can have on maternal and infant health, which provides evidence for clinical interventions and government nutrition-related policies. Additionally, this Special Issue provides study directions for research on micronutrients among pregnant women and infants. In this Special Issue, original research articles and reviews were welcomed. Research areas include, but are not limited to, the following: Micronutrient status of pregnant women and infants; Relationship between micronutrients and pregnancy complications as well as birth outcomes

We have found that visual framing married to affinity organization is one of the most important strengths in critical mapping, helping to communicate the concepts to stakeholders, structure our analysis, and identify places to intervene in the system to design a more sustainable future. In this book, we apply critical mapping to the challenge of identifying and compiling food DOs that are equitable, just, and resilient against ecological and economic changes; that is, the wicked solution must entail sustainable design. “Sustainable design” in this context refers to the manifestation of creative problem solving across a range of intangible and tangible design forms of varying degrees of sustainability. Using food insecurity as the wicked problem, this chapter introduces a visual framework for critically mapping a wicked solution, a diagram onto which existing sustainable DOs are charted and analyzed to identify places where designers should intervene to impact the current state of the system—in the specific case of food—and shift it toward a future of sustainable food security within the realm of equity and justice

It is caused by a defective protein called the CF transmembrane conductance regulator (CFTR) and while the effects are seen throughout the body, changes in the lungs, gastrointestinal tract, pancreas and liver primarily impact nutritional status. Survival and pulmonary function have been linked to nutritional status. Malnutrition and growth failure were historically the hallmark of disease. Patients with pancreatic insufficiency require pancreatic enzyme replacement therapy and fat-soluble vitamin supplements. With improvements in many areas including newborn screening, nutrition supplements, pancreatic enzymes, CFTR modulator drugs, inhaled antibiotics and mucolytics, life expectancy has increased. In this issue, we will review the latest information in children and adults regarding important factors that play a role in optimizing nutrition status, including body composition, the gut microbiome, food security, pancreatic enzyme replacement therapy, growth and bone health, and micronutrient abnormalities. The areas involved in this perspective range from food chemistry and analysis to nutrition and from safety to sustainability; new therapeutical approaches and novel techniques of analysis and formulation are also involved, which require a wide inter- and multi-disciplinary approach. The overall assessment of these aspects creates new challenges for research and also impacts sustainability, health and safety. This Special Issue may also consider the bridging of health and food in their different declinations from a new perspective

Vegetable-derived peptides have shown multifunctional effects related to chronic diseases, attracting interest from the food, nutraceutical, and pharmaceutical industries. This reprint highlights studies on various vegetable extracts, such as chestnut, quinoa, amaranth, buckwheat, and Protium heptaphyllum gum resin, which have demonstrated antimicrobial, anti-inflammatory, and cholesterol-regulating properties. Specific compounds derived from plants, such as methyl p-coumarate and lupin protein hydrolysate, have shown effectiveness in reducing inflammation and anxiety, respectively. A vegetable extract of rosemary has been studied for its potential to treat osteogenesis imperfecta. Moreover, this repprint reviews Lycium barbarum berries, essential oils from Annonaceae species, antioxidant compounds, phytosterols, and natural compounds for the prevention and treatment of oral mucositis was discussed.     Abstract: This reprint describes the ability of some foods or natural substances extracted by plants to counteract some of the most common diseases at present, such as obesity, diabetes, intestinal inflammatory diseases, and neurodegeneration. It is well accepted that high-fat diets that are rich in saturated fats are involved in the onset and progression of obesity and its dangerous comorbidities. It is also well accepted that a balanced diet is useful to maintain a good health status and the choice of certain foods could help to counteract the onset of chronic diseases. Foods and natural substances rich in compounds with anti-inflammatory and antioxidant properties should be paid attention. Most of these foods belong to the Mediterranean Diet, and they are famous for being rich of unsaturated fatty acids, such as the oleic acid found in extra-virgin olive oil, or the omega 3 contained in fish, vitamin D and vitamin C with their high anti-oxidant capacity, and spices and nuts that can counteract inflammatory status. These substances have also anti-obesity properties, because they are able to reduce fat mass and and restore the physiological role of fat tissue. Therefore, strict adherence to this healthy diet could be enough to prevent the onset of chronic diseases linked to fatty diets or aging. The scientific data collected in this reprint could provide new insights, allowing for readers to change their own dietary habits and make more informed food choices

    Abstract: We are very excited to introduce this Special Issue of Nutrients, “Advances in Legumes for Human Nutrition”. Recently, legumes have contributed to a sustainable and increased food supply for the rapidly growing global population due to climate change. Legume seeds that are intact or milled into flour offer a complex array of macro- and micronutrients and phytochemicals for human nutrition. Additionally, they can be fractionated into their component proteins, starches, lipids and dietary fibre as health- and techno-functional food ingredients. These ingredients are in great demand by the food industry, for example, in the manufacture of vegetarian and vegan dairy products and meat analogues with good nutritional profiles.     Abstract: The prevalence rates of risk factors for premature mortality and early non-communicable diseases are growing due to the increasing prevalence of poor nutrition habits, increasing levels of stress, and sedentary lifestyles. The life course epidemiology offers an integrative approach which guides research on health, human development, and ageing. The translation of this life course approach to women’s health is indispensable. It comprises the investigation of risk factors across the life that influence the timing of menarche, fertility, pregnancy outcomes, gynaecological disorders, and age at menopause. It also recognises the important influence of reproductive health on later non-communicable disease risks. The continuity of reproductive health and the relationship between different biomarkers and risk factors are taken into account in this integrative approach. Within women’s life courses, lifestyle plays an essential role, ranging from young age to pregnancy, menopause, and healthy aging. The underlying mechanisms and the effect sizes between nutrition and many diseases are only partly known due to the often multifactorial disease processes. The link between lifestyle and the growing rates of different diseases (e.g., cervical, ovarian carcinoma, breast cancer, cardiovascular diseases, or diabetes mellitus) needs to be investigated further. New scientific approaches are being used to try to relate individual biomarkers to dietary patterns and changes in the microbiome in order to make risk potentials visible earlier. The collection of scientific contributions on nutrition and women’s health is presented here

    Abstract: This book analyzes the coloniality of the concept of taste that gastronomy constructed and normalized as modern. It shows how gastronomy's engagement with rationalist and aesthetic thought, and with colonial and capitalist structures, led to the desensualization, bureaucratization and racialization of its conceptualization of taste. The Coloniality of Modern Taste provides an understanding of gastronomy that moves away from the usual celebratory approach. Through a discussion of nineteenth-century gastronomic publications, this book illustrates how the gastronomic notion of taste was shaped by a number of specifically modern constraints. It compares the gastronomic approach to taste to conceptualizations of taste that emerged in other geographical and philosophical contexts to illustrate that the gastronomic approach stands out as particularly bereft of affect. The book argues that the understanding of taste constructed by gastronomic texts continues to burden the affective experience of taste, while encouraging patterns of food consumption that rely on an exploitative and unsustainable global food system.     Abstract: Attention-deficit hyperactivity disorder (ADHD) is a neurodevelopmental chronic disorder which etiology seems the result of complex interactions between multiple factors, including genetic, biological, and environmental influences. Treatment research has proved that the combination of both medication with behavioral therapy can improve ADHD symptoms; Moreover, recent studies suggest the need for new approaches aimed at the underlying triggers of this complex disorder (such as stress, poor sleep or certain dietary plans), on the basis that making adequate lifestyle changes to minimize these triggers could contribute to better control ADHD symptoms. In this context, studies addressing the efficacy of nutrition on the developmental course of ADHD observe that deficiencies in certain types of foods can worse the symptoms of attention deficit, hyperactivity, and impulsivity, while adequate dietary plans could optimize brain functions. Nevertheless, the specific causal pathways of the dietary styles adjuvant for medication and psychotherapies contributing to prevent/reduce ADHD symptoms are largely unknown, as well as the long-term effects. This book includes evidence of the potential contribution of the nutrition styles on the treatment outcomes of individuals with ADHD and other frequent mental-psychiatric disorders across development, and the underlying mechanisms explaining the direct and mediational effects. The contents of this book could contribute to the elaboration of guidelines/recommendations for improving caring capacity of healthcare practitioners and family caregivers

    Abstract: Creatine plays a critical role in cellular metabolism, primarily by binding with phosphate to form phosphocreatine (PCr) as well as shuttling high-energy phosphate compounds in and out of the mitochondria for metabolism. Increasing the dietary availability of creatine increases the tissue and cellular availability of PCr, and thereby enhances the ability to maintain high-energy states during intense exercise. For this reason, creatine monohydrate has been extensively studied as an ergogenic aid for exercise, training, and sport. Limitations in the ability to synthesize creatine and transport and/or store dietary creatine can impair metabolism and is a contributor to several disease states. Additionally, creatine provides an important source of energy during metabolically stressed states, particularly when oxygen availability is limited. Thus, researchers have assessed the role of creatine supplementation on health throughout the lifespan, as well as whether creatine availability may improve disease management and/or therapeutic outcomes.     Abstract: Exercise necessitates increased energy production to match the elevated demand of physical activity, the magnitude of which varies significantly by activity, sport, and/or athletic position. While long term nutritional habitus is known to impact exercise performance, short term or acute nutritional strategies may also prove beneficial, or detrimental, to athletic performance. Modifications to macro- or micro-nutrient intakes likely influence athletic capacity through the altered metabolic capacity, although cardiovascular, respiratory, or neurocognitive effects are not to be discounted as possibly being influenced by altering the nutritional approach. Similarly, dietary supplementation with factors such as probiotics or antioxidants, either acutely or chronically, is also a likely avenue in which to optimize athletic performance. Supplementation, or the timing of supplementation, diurnally or with activity, may help to bridge gaps between dietary intakes and needs, perhaps as a result of either an inadequate intake and/or high level of athletic demand via high intensity, frequency, volume, or a combination thereof. Altering nutritional strategy for athletic performance is a de facto approach employed by athletes, often occurring seemingly independent of knowledge or evidence for or against a particular strategy. Rigorous studies of nutritional manipulation, supplementation, or those exploring the temporal optimization of nutrition or supplementation are desperately needed in an ever-changing sports nutrition landscape with an increasingly larger audience

Postmenopausal women are also at increased risk of cardiovascular morbidity as a net effect of central obesity, dyslipidemia, hypertension, and diabetes, as well as for osteoporosis, cognitive decline, and genitourinary syndrome of menopause. Hormone replacement therapy (HRT) has played a central role in improving menopausal symptoms and reducing the disease risks associated with estrogen deficiency. However, due to growing concern for the side effects of HRT, especially in patients with hormone-sensitive cancer such as breast and uterus cancer, research has turned to the effects of nutraceutical approaches to these symptoms and diseases.     Abstract: Phenylketonuria (PKU) is an established inherited amino acid disorder with a very traditional dietary therapy, but there is still more to learn and verify about its nutritional composition, application and overall effectiveness. Although in the 1950s, the first patient successfully treated with diet therapy patently established the role of a low phenylalanine protein substitute, in present times, it is still necessary to characterise the most effective source of artificial protein; defining its optimal amino acid profile; and identifying nutrient modulation that will improve the functionality of protein substitutes. It is also important to understand the impact of a life-long synthetic diet on gut microbiota, metabolomics and inflammatory status. In early-treated patients with PKU, it is unclear if co-morbidities such as overweight, obesity, hypertension and diabetes are higher than in the general population and if these are associated with increased cardiovascular risk. It is also uncertain if overweight and obesity in PKU is related to early dietary practices, the nutritional composition of protein substitutes and special low-protein foods, impact of the dietary treatment on satiety, disordered eating patterns, non-adherence with the low phenylalanine diet and poor metabolic control, or if this is even a consequence of the disorder. In a generation of ageing patients, the impact of intermittent and suboptimal dietary adherence on nutritional status deserves systematic study

In breeding, molecular genetic tools (genomic selection and genome editing) can be used to increase production efficiency and fitness, especially immunity traits, or to characterize local genetic pools. The One Health approach, which requires a holistic approach, where genetics, nutrition, health treatment, and management need to be considered together, has gained ground in the poultry industry. The gut microbiome seems to be a good indicator of the balanced health of an animal. Artificial intelligence, built into robotic supervision and handling, helps to increase animal comfort and save costs in the workforce. Organic farming takes a different approach and faces different challenges. What could the possible answers be? We are facing a new era in poultry science. Although during the last 3 years there have been numerous research publications on patient care, data concerning the role of the dietary approach in the overall treatment of the disease are minimal. Moreover, with regard to the dietary approach during COVID-19 critical illness, practice guidelines are still based on data which were developed too quickly and were based on targeted recommendations on feeding the critically ill. Since then, new sources of data have emerged, which clearly display significant nutritional challenges. Why are we so interested in providing individualized nutritional therapy to critically ill patients with COVID-19? Bevause these patients tend to exhibit a significantly greater length of hospital stay, and a higher risk of developing muscle weakness, malnutrition and functional loss. Are there any data on best nutrition support practices? Unfortunately, there are no data from randomized clinical trials, with the exception of some micronutrient supplementation studies with immunomodulating actions. So, the key concept identified in this Special Issue was that optimizing dietary practices for patients both during their ICU stay and beyond is crucial. Clinicians should be capable of managing their patients both during their hospitalization and rehabilitation phase, in order to ensure continuous care and to minimize the susceptibility of adverse events due to malnutrition

    Abstract: Over the last few decades, the Mediterranean Diet (MD), characterized by a high intake of vegetables, legumes, fruits, nuts, dairy products and non-refined cereals, a moderate intake of fish and poultry, and a low intake of red meat and sweets, has been recognized as a model for healthy eating. Indeed, adhering to the MD reduces the risk of metabolic and non-communicable diseases, including type 2 diabetes, metabolic syndrome, obesity cardiovascular disease and cancer. As an integral part of the traditional Mediterranean lifestyle, regular physical activity (PA) is also associated with a reduced risk of chronic degenerative diseases, even if results often vary according to different types, duration and intensity or volume of PA. The World Health Organization recommends performing moderate-intensity PA for ≥150 min/week, and vigorous-intensity PA for ≥2 days/week to have these health benefits. It is viable to hypothesize that promoting adherence to the MD along with PA guidelines might provide a more comprehensive endorsement to obtain greater health benefits, over and above those acquired separately by the MD and PA. Thus, the ongoing promotion and monitoring of the MD pattern, including eating habits and PA, is crucially important at all life stages. Potential topics may include, but are not limited to, examining the impact of adherence to the MD and PA on health in different life stages as well as on metabolic risk factors and subsequent disease outcomes

    Abstract: Caffeine is present in coffee and many other beverages and is the most widely used central nervous system stimulant. Coffee drinking or caffeine supplementation may have a role in preventing cardiometabolic and endocrine disease, neuroinflammation, cancer, and even all-cause mortality. Other aspects are either less known or controversial, including the effects on the brain-gut axis, neurodevelopment, behavior, pain, muscle-skeletal health, skin or sexual function. Studies focusing on special populations (neonates, children, adolescents, athletes, elderly, pregnant and nonpregnant women), or interactions with other drugs and foods, are relatively scarce but of obvious interest. Other compounds present in coffee and other caffeinated food stuffs may affect caffeine´s physiological effects with a tremendous impact on health. This Special Issue, which contains twenty-one manuscripts, has focused on some of these varied topics, providing further evidence of the multiple health benefits that coffee/caffeine intake may exert in humans, at least in specific populations (with a particular genetic profile or suffering from specific diseases). However, the specific effects in the different organs and systems, as well as the mechanisms involved are not yet clear. Furthermore, within the current context aiming to sustainable development, the coffee plant Coffee sp. and its so-far relatively neglected by-products are expected to become soon a source of ingredients for new functional foods whose properties will need to be precisely determined. We hope the readers of this Special Issue will find inspiration for new studies on the topic

The works presented herein touch on various topics and themes that are relevant to a changing food landscape aimed at incorporating more pulses and whole grains into diets. They identify near and future benefits of pulses and whole grains on health, but also underscore some of the underlying challenges around their dietary incorporation. In this Special Issue, we will focus on innovations in organic and inorganic fertilizer production. We welcome studies concerning new approaches for smart fertilizer development, including bioformulations with mineral particles, nanomaterials, and plant growth promoting microorganisms. We especially encourage authors taking advantage of ecological interactions to improve plant nutrient-use efficiency.     Abstract: Diet plays a fundamental role in shaping the composition and metabolic activity of the gut microbiota and, thus, it could determine the interrelationship between the gut microbiome and the host. The colon is the part of the human body that is most densely populated, containing bacteria, archaea, viruses, and some unicellular eukaryotes that have co-evolved with humans in a commensal way. The gut microbiota plays a crucial role in the maintenance of normal host physiology. The rapid development of next-generation sequencing (NGS) methods for DNA sequencing in the last decade has facilitated in-depth study of gut microbiome composition and function. These methods have contributed to providing evidence regarding the relevance of the intestinal microbiota for host health as well as the basis for putative dietary interventions aimed at counteracting microbiota dysbiosis. Understanding the complex and dynamic interaction between dietary exposures and gut microbiota can help to elucidate their potential role in different pathologies and to guide future strategies for the prevention and treatment of diseases. Age-related changes in the gut microbiome are also associated with physiological changes in the gastrointestinal tract as well as in dietary patterns, with a concomitant decline in the normal function of the immune system that may contribute to increased risk of infection and frailty. More studies are needed to better understand how the microbiota shifts with different environmental factors and how they are associated with dietary changes
