Abstract:
In einem Dorf am Rio Batoví werden Maniokknollen geerntet, abgeschabt, gewaschen, gerieben, mit Hilfe eines Mattensiebes ausgepreßt und in kleinen Ballen getrocknet. Nach Absetzen der Stärke wird der blausäurehaltige Saft abgeschöpft, die Stärkeschicht zerkrümelt und getrocknet. Aus feinem Stärkemehl werden Fladen gebacken.
Abstract:
Manioc tubers are harvested, then scraped off, washed and grated behind the house. The ground mass is squeezed out over a large pot with aid of a sieve and dried in small balls. After the starch has percipitated to the bottom of the pot, the liquid, which contains prussic acid, is ladled off; the layer of starch is crumbled and dried in the sun. Cakes (beijú) are baked from the fine starch-flour.
