    Kurzfassung: This volume addresses the overlapping aspects of the fields of genomics, obesity and (non-) medical ethics. It is unique in its examination of the implications of genomics for obesity from an ethical perspective. Genomics covers the sciences and technologies involved in the pathways that DNA takes until the organism is completely built and sustained: the range of genes (DNA), transcriptor factors, enhancers, promoters, RNA (copy of DNA), proteins, metabolism of cell, cellular interactions, organisms. Genomics offers a holistic approach, which, when applied to obesity, can have surprising and disturbing implications for the existing networks tackling this phenomenon. The ethical concerns and consideration presented are inspired by the interaction between the procedural perspective emphasizing the necessity of consultative and participatory organizational relationships in the new gray zones between medicine and food, and the substantive perspective that both cherishes individual autonomy and embeds it in socio-cultural contexts.

    Kurzfassung: Traceability – the ability to track a product from farm to plate – is now widely used in the food sector for a range of purposes: it allows companies to improve efficiency, facilitates product recall, and helps producers flag the specific characteristics of their goods. But traceability systems are mainly designed and used by the people directly involved in the food chain. The people at the end of the food chain – food consumers – have little say in which attributes are traced, and can rarely access the information stored in traceability systems. This book draws on philosophical discourses (like ethics, political philosophy and philosophy of law) around food ethics and empirical research in three important food chains (UK bread, Danish bacon and Greek olive oil) to argue that ethical traceability systems could be used to communicate food information to consumers, allowing them not only to make food choices consistent with their own values, but also to play a more informed role in the way food is produced and distributed. It will appeal to academics, students and policy makers with an interest in traceability, food ethics and food policy.

    Kurzfassung: This book is an extensive, original and systematic treatment of many important philosophical and ethical aspects of food (consumption and production). The care of the environment, animal welfare, and the quality of food should be in a certain harmony, but that is far from granted and hardly easy to achieve. These factors are often in conflict with each other, and a balance will thus need to be searched for. Other factors to take into consideration are the issue of global famine, the care for a farming class that is able to keep its head above water in a decent way, and a fair trade system that does not throw up unnecessary barriers for newcomers or small market participants and that promotes good nutrition. Scientific and technological developments like genetic modification and functional food also play an increasingly important role; almost every bite that we take is determined by scientific developments. An extra difficulty is that scientific information is often contradictory, or that it relies on statistical probabilities that are difficult to translate into everyday certitudes. All of these factors deserve attention, but it is the mix that is most important. In the land of food, ‘either or’ does not exist, only ‘both and’. The adequate measure of ‘both and’ serves as the starting point for this philosophical reflection. Before Dinner is a must-read for all people interested in contemporary ethical issues of food, such as university students and researchers of food, agricultural and life sciences, as well as policymakers in these fields, such as members of professional organisations focusing on food and agriculture (f.e., EURSAFE (European Society for Agriculture and Food Ethics), the Agriculture, Food and Human Values Society (USA), and European Federation of Biotechnology)
