    Abstract: Due to the accumulation of oxygen in Earth’s atmosphere, endogenous antioxidants in aerobic organisms evolved. More than a simple attack (reactive species) or a defense (enzymatic and non-enzymatic antioxidants) duel, redox metabolism also comprises non-radical redox metabolites, redox-sensitive transcription factors, and redox-sensitive proteins that form a network of signaling pathways. These pathways are now known to mediate important processes in aerobic organisms, from circadian rhythms to ageing and lifespan regulation. Indeed, oxidative stress is considered to be important to living organisms. Unsurprisingly, environmental stresses might disrupt the redox balance, triggering compensatory adaptive responses. The modulation of redox metabolism has been documented for phylogenetically diverse species exposed to a myriad of environmental stressors, such as warming, freezing, dehydration, exposure to UV radiation, exposure to pollutants, and variations in oxygen availability. In natural settings, several of these environmental factors (e.g., temperature, water availability, oxygen availability, and radiation incidence) fluctuate over time (e.g., daily and seasonally). This Special Issue focuses on the responses of organisms’ redox metabolism when exposed to single or combined changes, biotic or abiotic, in environmental factors (e.g., oxygen availability, temperature, drought, radiation, and pollutants) and provides insights into the adaptive responses of antioxidant systems to environmental perturbations

Geomaterials are essential for life due to human construct extraction, mining, storage, and transport areas in the Earth’s crust for raw material. Drilling and excavations of underground openings in the Earth’s crust are requirements for the exploitation and utilization of mineral resources, energy resources, and underground spaces. The deepest drilling depth has exceeded 12 km, and the deepest underground excavation now operates mines with depths exceeding 4 to 5 km. Drilling, excavation, and rock support processes largely rely on the physical and mechanical properties of geomaterials. Rock excavations are faced with some instability phenomena, such as caving, rock bursts, slabbing, large deformation, and zonal disintegration, posing a serious threat to the safety of mining and tunneling operations. Rock drilling also encounters many challenges deep underground. Deformation, fracture, failure, and fragmentation are the different stages of geomaterials, the monitoring and control of which are essential for ensuring drilling and excavation safety.     Abstract: Porous media play an important role in a wide range of scientific and engineering problems. Therefore, the problems of their application are associated with the solution of multiscale processes that combine the transfer of mass, momentum, and energy.This Special Issue is devoted to the actual scientific problem of studying the processes of interconnected heat and mass transfer in porous media. This problem is one of the most complex and important fundamental areas of modern science and is of great applied importance. The results of heat and mass transfer studies in porous materials can be used to intensify heat transfer at various power plants in order to increase their energy efficiency. The purpose of this Special Issue is to showcase the latest developments in PM heat transfer and mass transfer technologies that contribute to sustainable development. Despite the fact that considerable attention has been paid to these issues, there is constant demand for innovative solutions to solve a wide range of problems in this area. Therefore, this Special Issue attempts to highlight and propose new solutions to these problems. These works develop a basic understanding of the scientific problems of heat and mass transfer in porous materials.     Abstract: Bioactive compounds, which are abundant in flora, fauna, and microorganisms, can potentially be used by various industries, including pharmaceuticals, functional foods, dietary supplements, and cosmetics. Their extraction and purification, however, pose significant challenges due to the presence of impurities, interference from other compounds, and the need to maintain their stability as well as activity. It delves into the complexities of these processes, presenting one review paper and eleven original research articles that explore the enrichment, identification, and various aspects of bioactive compounds. A comprehensive review of the current methodologies used for obtaining bioactive products from microalgae was presented. Conventional and green extraction techniques were compared for natural antioxidants from Saudi date fruit. The carotenoid extraction protocol using yeast fermentation technology was explored. The utilization of resins for the adsorption of bioactive compounds was addressed. The ion exchange strategy with Dowex® HCR-S resin was discussed for the isolation and purification of ectoine. The constituents of acidic compounds in the particulate and gaseous phases of mainstream cigarette smoke were analyzed. The composition of bioactive compounds in organically produced cereals, dried sea cucumber viscera, and the medicinal plant Clinacanthus nutans were also investigated. This Special Issue covers other aspects of bioactive compounds, such as optimizing the operating parameters of enzymatic transesterification for producing biodiesel from salmon oil. This Special Issue may inspire future research and innovation in this exciting field

    Abstract: The exposure of animals to environmental stresses (restraint, bad housing conditions, irradiation, pollution, diseases, and heat stress) and endogenous stresses (metabolic and physiological disorders) can seriously disrupt the redox homeostasis, leading to impairments in animals’ health and overall performance. Under these circumstances, the self-antioxidant defense system may not be enough to neutralize ROS effects. In this context, the utilization of an exogenous source of antioxidants, mainly dietary sources, may present an effective and cost-effective solution. There are a plethora of substances, either naturally occurring or synthesized (organic acids, minerals, vitamins, hormones, and specific feed additives originating from plants such as essential oils and polyphenols), known for their antioxidant activity, that can be used to maintain adequate redox status in animals in order to preserve their well-being and/or productivity. This area of research still needs more investigations in order to clearly elucidate the effective antioxidant substances that could be used in practical applications, with an emphasis on their biological mechanisms during different physiological conditions and health statuses.     Abstract: Submarine hydrothermal activity has been a focus of research since its discovery in the 1970s. It is widely believed that submarine hydrothermal activity offers significant prospects for the development of mineral and biological resources, and also that it has a considerable impact on the immediate seawater environment. The study of submarine hydrothermal activity is a multi-disciplinary topic that includes tectonics, petrology, mineralogy, sedimentology, chemistry and oceanography. The development of hydrothermal circulation is controlled in tectonic and magmatic settings, including extensional tectonics where shallow magma reservoirs exist. The chemical compositions of hydrothermal fluids, which are affected by fluid–rock interactions beneath the seafloor and potentially by magma degassing are recorded in hydrothermal minerals, sediments, and seawater. Naturally, such a broad area of research cannot be advanced without the development of exploratory and analytical techniques.     Abstract: The production of food enriched with bioactive compounds, through natural means, represents a concept desired by nutritionists, doctors and consumers. Animal products with high nutritional quality can be designed using innovative feeding strategies. Animals are known to be able to ‘‘bio-convert’’ health-promoting components from their diet into their eggs, milk or meat. The nutritional quality of animal products depends on genetic, physiological and environmental conditions, but also upon their diets. Lately, various feed additives have been shown to increase the nutritional quality of animal-origin food, which in turn promotes a healthy human diet. Some of them have proven effects on productive parameters or on the sensory attributes of animal products, or modify the nutrient composition of products. Nutritional evaluations of animal products and feeds are necessary for establishing the bioconversion yield of nutrients, from feeds to animal-origin food. In addition to classical risk factors, CVD burden is now recognized to be aggravated due to the growing population of cancer survivors treated with cardiotoxic cancer therapies or radiotherapy, which has fostered the development of a new field of research—cardio-oncology. Across the spectrum of CVD, multiple molecular pathways converge in endothelial dysfunction and myocardial remodeling, including inflammation, oxidative stress, defective calcium homeostasis, intercellular communication, and metabolic abnormalities.     Abstract: The authentication of foods and beverages is a very current topic of great interest for all the actors involved in the food chain, including the food industry, consumers, and food science researchers. Food authenticity covers many different aspects related to mislabeling, adulteration, and misleading claims about origin, production methods, or processing technologies. As many factors may affect the chemical composition of foods (e.g., geographical origin, variety or breed, conditions of cultivation, and breeding and/or feeding), the implementation of accurate, robust, and high-throughput analytical methods is needed to assess their authenticity and traceability and, consequently, guarantee their safety and quality in terms of organoleptic, nutritional, and bioactive characteristics. For these purposes, multiple analytical tools can be employed in combination with advanced chemometrics, such as spectroscopic and chromatographic techniques, DNA-based methods, and state-of-the-art omics approaches. In this context, in 2020, the journal Foods launched the Special Issue “Food Authentication: Techniques, Trends and Emerging Approaches” to gather research papers and review articles dealing with the development and application of analytical techniques and emerging approaches in food authentication. Considering the success and popularity of this earlier Special Issue, we will now release a second Special Issue comprising ten valuable scientific contributions, including one review article, one commentary article, and eight original research articles

Chromatographic separation and analysis are very important for quality control of natural products. There are six articles from different countries focusing on this topic. There are two articles investigating separation technologies, including membrane filtration and ethanol precipitation. Traditional Chinese medicines are also an important category of natural products. A review from Zhejiang University talks about the quality control of Xiaochaihu Capsule.     Abstract: Halophytes are a fascinating group of wild plants adapted to highly saline natural habitats, where most plant species and all our conventional crops would not survive. In fact, some halophytes can withstand even seawater salinity. In the current climate change scenario, increasing average temperatures and drought episodes contribute to the accelerated salinisation of irrigated cropland, especially in arid and semiarid regions, by the progressive accumulation in the soil of salts dissolved in irrigation water. This ‘secondary salinisation’ is one of the major causes of reducing crop yields worldwide. In this context, halophytes represent ideal experimental systems to investigate the mechanisms plants use to respond to high-salinity conditions. This knowledge will be essential for the genetic improvement of crop salt tolerance, which represents the most sensible strategy to address the abovementioned problem. Furthermore, halophytes could be the basis of a sustainable, ‘saline’ agriculture, after domestication and some breeding to improve agronomic characteristics. Then, they could be commercially cultivated for food, feed, fibre, or the production of biomolecules of industrial interest. Since they could be grown in saline land and irrigated with brackish water, they will not compete with our conventional crops for these limited resources, fertile land and good-quality water for irrigation. The articles included in this Special Issue address these different aspects of halophytes’ research, although most focus on basic studies on salt-tolerance mechanisms
