    Abstract: The global coronavirus pandemic has highlighted the paramount importance of immune health and the nutrient status of peoples worldwide. Vitamins C and D have important roles in both the innate and adaptive immune systems and are known to support healthy immune function. Both vitamins C and D have gene regulatory roles with the ability to up- and down-regulate thousands of genes, thus playing pleotropic roles in human health and disease.     Abstract: Abiotic stress includes not only single adversities, i.e., drought, salt, temperature, and elevated CO2, but also complex stresses, i.e., saline and alkali soil, and karst environment. Abiotic stresses strongly affect many aspects of a plant’s substance and energy metabolism. Meanwhile, abiotic stress not only affects the physiological processes of photosynthesis, water metabolism, and inorganic nutrient absorption, but it also influences the electrophysiology and other physical parameters of plants. Plant physiological information, especially online physiological information, helps us to understand the plant’s adaptive mechanism and take the effective measures to improve the production of horticultural plants. This Special Issue contains a collection of 11 important research works, which deepen the connotation and expand the denotation of plant physiology under abiotic stress. These works will provide a theoretical basis for the production of horticultural crops under single stresses, such as drought and salt stress, or under complex stresses, such as saline and alkali and karst environments. Vegetable-derived peptides have shown multifunctional effects related to chronic diseases, attracting interest from the food, nutraceutical, and pharmaceutical industries. This reprint highlights studies on various vegetable extracts, such as chestnut, quinoa, amaranth, buckwheat, and Protium heptaphyllum gum resin, which have demonstrated antimicrobial, anti-inflammatory, and cholesterol-regulating properties. Specific compounds derived from plants, such as methyl p-coumarate and lupin protein hydrolysate, have shown effectiveness in reducing inflammation and anxiety, respectively. A vegetable extract of rosemary has been studied for its potential to treat osteogenesis imperfecta.     Abstract: Light is an essential factor for the growth and quality of horticultural plants and its effects depend upon parameters such as duration, intensity and quality. It is an energy source for photosynthesis as well as a signal triggering plant photomorphogenesis and physiological, biochemical and molecular responses. However, solar light strongly differs between winter and summer conditions, with excess light in open field cultivations imposing severe stress on plants, especially during summer months, while supplementary light sources are implemented in greenhouse crop production to complement natural light when it is insufficient. On the other hand, artificial lighting is used as the sole lighting source in plant factories and nurseries (i.e., healing chambers, plant tissue culture). In order to enhance sustainability and profitability, light must be studied and efficiently applied within horticultural crop production.     Abstract: The delivery of genome sequences for most livestock species over the past 10–15 years has generated the potential to revolutionise livestock production globally, by providing farmers with the ability to match individual animals to rapidly changing climates, production systems and markets. Initially, technologies such as marker-assisted selection, functional genomics, gene expression, transcriptomics, proteomics and metabolomics were hailed as technologies with the greatest promise of delivering on that potential. To date, however, their potential for the delivery of practical solutions for livestock farmers is still to be realised, though they do provide supportive evidence of value to other approaches. Gene editing using tools such as CRISPR-Cas9 also show strong promise, but face regulatory hurdles before practical applications can be delivered for use by farmers. The technology that has had the greatest impact to date is genomic selection. This year marks 20 years since genomic selection was developed by Meuwissen, Hayes and Goddard (Genetics, 2001, 157: 1819-1829) and genomic selection has been successfully applied in livestock, plants and even human health applications. However, genomic selection also faces ongoing limitations around lack of essential phenotypes, particularly for expensive or difficult-to-measure traits and possibly the need for faster/greater computational capacity. It is therefore timely to examine the impact of genomic technologies generally, and to identify successes and limitations that need to be overcome in order to achieve practical applications for livestock producers in future

    Abstract: The salinity of soil and water is a problem present in all continents, especially in arid and semi-arid regions. Worldwide data indicate that 20% of the total cultivated area (upland and irrigated) and 33% of irrigated agricultural land are affected by excess salts in the soil. Furthermore, a significant number of the water sources in these regions, notably groundwater, have high concentrations of salts, which is a limiting factor for agricultural production. On the other hand, the growing demand for food because of population increases, the scarcity of water resources and land for the expansion of agriculture, and global climate change scenarios indicate the need to use these saline resources. In this context, biosaline and HALO agriculture appear to be some of the sustainable tools to increase food production and create job opportunities and sources of income for farmers.     Abstract: Many food components (such as phytochemicals, carbohydrates, proteins, fats, vitamins, minerals, etc.) have been found to have various biological activities. Based on dietary intake and the availability of nutrients in the intestine, human gut microbiota can produce harmful metabolites that cause human diseases or beneficial compounds that prevent host diseases. Abnormal gut microbiota can produce endotoxins, exacerbating chronic inflammation and metabolic disorders. Moreover, gut microbiota is crucial for maintaining metabolism and health, and dysbiosis plays a crucial role in the occurrence and development of various diseases. Therefore, a promising strategy to help manage colon and host health is to regulate the composition of the gut microbiota by eating biologically active food ingredients. Bioactive ingredients obtained from dietary sources can be designed and characterized to meet human nutritional and immune needs and balance gut microbiota. To maximize knowledge on the health effect of gut microbiota on improving human health, a Special Issue titled “Molecular Mechanisms of Bioactive Nutrients Promoting Health through Gut Microbiota” was published in the International Journal of Molecular Science, including nine papers: six research articles and three reviews.     Abstract: This reprint describes the ability of some foods or natural substances extracted by plants to counteract some of the most common diseases at present, such as obesity, diabetes, intestinal inflammatory diseases, and neurodegeneration. It is well accepted that high-fat diets that are rich in saturated fats are involved in the onset and progression of obesity and its dangerous comorbidities. It is also well accepted that a balanced diet is useful to maintain a good health status and the choice of certain foods could help to counteract the onset of chronic diseases. Foods and natural substances rich in compounds with anti-inflammatory and antioxidant properties should be paid attention. Most of these foods belong to the Mediterranean Diet, and they are famous for being rich of unsaturated fatty acids, such as the oleic acid found in extra-virgin olive oil, or the omega 3 contained in fish, vitamin D and vitamin C with their high anti-oxidant capacity, and spices and nuts that can counteract inflammatory status. These substances have also anti-obesity properties, because they are able to reduce fat mass and and restore the physiological role of fat tissue. Therefore, strict adherence to this healthy diet could be enough to prevent the onset of chronic diseases linked to fatty diets or aging. The scientific data collected in this reprint could provide new insights, allowing for readers to change their own dietary habits and make more informed food choices

    Abstract: Cystic Fibrosis is an inherited disease that starts in utero. It is caused by a defective protein called the CF transmembrane conductance regulator (CFTR) and while the effects are seen throughout the body, changes in the lungs, gastrointestinal tract, pancreas and liver primarily impact nutritional status. Survival and pulmonary function have been linked to nutritional status. Malnutrition and growth failure were historically the hallmark of disease. Patients with pancreatic insufficiency require pancreatic enzyme replacement therapy and fat-soluble vitamin supplements. With improvements in many areas including newborn screening, nutrition supplements, pancreatic enzymes, CFTR modulator drugs, inhaled antibiotics and mucolytics, life expectancy has increased. In this issue, we will review the latest information in children and adults regarding important factors that play a role in optimizing nutrition status, including body composition, the gut microbiome, food security, pancreatic enzyme replacement therapy, growth and bone health, and micronutrient abnormalities. Pediatric and adult providers both need to be aware of the nuances of care as more patients with CF become adults.     Abstract: We are very excited to introduce this Special Issue of Nutrients, “Advances in Legumes for Human Nutrition”. Recently, legumes have contributed to a sustainable and increased food supply for the rapidly growing global population due to climate change. Legume seeds that are intact or milled into flour offer a complex array of macro- and micronutrients and phytochemicals for human nutrition. Additionally, they can be fractionated into their component proteins, starches, lipids and dietary fibre as health- and techno-functional food ingredients. These ingredients are in great demand by the food industry, for example, in the manufacture of vegetarian and vegan dairy products and meat analogues with good nutritional profiles. However, the issues, such as micronutrient availability, antinutrients and allergenicity, still require solutions for the maximum uptake of legumes by humans.     Abstract: The prevalence rates of risk factors for premature mortality and early non-communicable diseases are growing due to the increasing prevalence of poor nutrition habits, increasing levels of stress, and sedentary lifestyles. The life course epidemiology offers an integrative approach which guides research on health, human development, and ageing. The translation of this life course approach to women’s health is indispensable. It comprises the investigation of risk factors across the life that influence the timing of menarche, fertility, pregnancy outcomes, gynaecological disorders, and age at menopause. It also recognises the important influence of reproductive health on later non-communicable disease risks. The continuity of reproductive health and the relationship between different biomarkers and risk factors are taken into account in this integrative approach. Within women’s life courses, lifestyle plays an essential role, ranging from young age to pregnancy, menopause, and healthy aging. The underlying mechanisms and the effect sizes between nutrition and many diseases are only partly known due to the often multifactorial disease processes. The link between lifestyle and the growing rates of different diseases (e.g., cervical, ovarian carcinoma, breast cancer, cardiovascular diseases, or diabetes mellitus) needs to be investigated further. New scientific approaches are being used to try to relate individual biomarkers to dietary patterns and changes in the microbiome in order to make risk potentials visible earlier.     Abstract: This Special Issue includes 14 papers by authors from Italy, USA, Egypt, Brazil, Russia, Indonesia, Czech Republic, China, Lithuania, the Netherlands, and Greece, dealing with several topics. The spatial distribution of soil organic carbon is useful for improving crop productivity and assessing the effect of agronomic management on crops and soil. Two interpolation methods and remotely sensed images were used in two papers. Other papers dealed with the use of zeolite-rich tuff in olive growing to reduce mineral fertilization, tested the effectiveness of green manure crops in providing nutrients and supplementing traditional fertilizers, and proposed composted sewage sludge as a source of micronutrients for crops. Since soil-borne diseases worsen the fertility, other authors studied the bacteria in the rhizosphere of saffron. Mapping and modeling soil suitability and capability under intensive land use in drylands with multivariate analysis was the topic of another paper, as was the evaluation of forest patches for preserving water regulation in tropical landscapes. Other findings regard agricultural conservation practices that reinforced the small water cycle and the comparison of deep-rooted vegetal covers for stabilizing slopes or repairing shallow landslides.     Abstract: Land use is the projection of human activities in space, and it has become an important insight into the transformation and reconstruction of human society and economy. Rural land use in China is undergoing rapid transformation driven by the rapid development of science and technology.     Abstract: The term fertilizer use efficiency (FUE) is not new. However, in recent years, improving the FUE has become particularly significant. This is due to growing demographic pressure, limited natural resources, climate change, and challenges related to environmental protection. This Special Issue of Plants contains papers that describe the current status of the knowledge and outlook of FUE improvement. The two review articles included provide an opportunity to become acquainted with the factors influencing FUE and contemporary trends in the development of fertilization strategies and technologies aimed at maximizing the value of this indicator. Of note, the concept of effective fertilization is presented and defined as the soil fertility clock (SFC). The 19 original articles included in this reprint present the results of research on the following: optimal N dose determination, balanced N fertilization, nitrogen use efficiency (NUE), foliar fertilization, improving the effectiveness of phosphorus use, and the possibility of improving FUE through the application of innovative fertilizers.     Abstract: The recent COVID-19 pandemic, which resulted from SARS CoV-2 coronavirus infection, contributed to a rapid increase in hospital and intensive care unit (ICU) admissions. Although during the last 3 years there have been numerous research publications on patient care, data concerning the role of the dietary approach in the overall treatment of the disease are minimal. Moreover, with regard to the dietary approach during COVID-19 critical illness, practice guidelines are still based on data which were developed too quickly and were based on targeted recommendations on feeding the critically ill. Since then, new sources of data have emerged, which clearly display significant nutritional challenges. Why are we so interested in providing individualized nutritional therapy to critically ill patients with COVID-19? Bevause these patients tend to exhibit a significantly greater length of hospital stay, and a higher risk of developing muscle weakness, malnutrition and functional loss. Are there any data on best nutrition support practices? Unfortunately, there are no data from randomized clinical trials, with the exception of some micronutrient supplementation studies with immunomodulating actions. So, the key concept identified in this Special Issue was that optimizing dietary practices for patients both during their ICU stay and beyond is crucial. Clinicians should be capable of managing their patients both during their hospitalization and rehabilitation phase, in order to ensure continuous care and to minimize the susceptibility of adverse events due to malnutrition

    Abstract: Caffeine is present in coffee and many other beverages and is the most widely used central nervous system stimulant. Coffee drinking or caffeine supplementation may have a role in preventing cardiometabolic and endocrine disease, neuroinflammation, cancer, and even all-cause mortality. Other aspects are either less known or controversial, including the effects on the brain-gut axis, neurodevelopment, behavior, pain, muscle-skeletal health, skin or sexual function. Studies focusing on special populations (neonates, children, adolescents, athletes, elderly, pregnant and nonpregnant women), or interactions with other drugs and foods, are relatively scarce but of obvious interest. Other compounds present in coffee and other caffeinated food stuffs may affect caffeine´s physiological effects with a tremendous impact on health. This Special Issue, which contains twenty-one manuscripts, has focused on some of these varied topics, providing further evidence of the multiple health benefits that coffee/caffeine intake may exert in humans, at least in specific populations (with a particular genetic profile or suffering from specific diseases). However, the specific effects in the different organs and systems, as well as the mechanisms involved are not yet clear. Furthermore, within the current context aiming to sustainable development, the coffee plant Coffee sp. and its so-far relatively neglected by-products are expected to become soon a source of ingredients for new functional foods whose properties will need to be precisely determined. Still, their exact role, interplay, and mechanisms implicated in this process remain unclear. The trends of childhood obesity call for actions regarding the prevention and management of this disease early in life.     Abstract: Dietary fat quality is a crucial determinant of several physiological, biochemical and molecular processes in the body, tissues and cells. As a source of energy, Fatty Acids (FA) are mainly stored in fat cells and within lipid droplets (LD) in oxidative and steroidogenic tissues, but significant amounts are also found in cell membranes where their structural role is crucial for membrane protein functions and the control of cellular functions. Differential effects have been identified between different types FA on inflammatory and metabolic diseases during obesity or in response to physical exercise and chronic diseases. The most recent dietary guidelines advise that lipids should represent 35% of the daily energy intake in order to prevent deleterious effects of high glycaemic index carbohydrates and deficiency in essential fatty acids. Hence, the prevalence of obesity could rise dramatically despite a fall in total fat intake. Advice is more focused on the improvement of the quality of fat than on the reduction of total fat intake. Dietary fat sources provide a mixture of saturated FA (SFA), monounsaturated FA (MUFA) and polyunsaturated FA (PUFA). Most institutional dietary guidelines claim that the consumption of SFA should be limited to the expense of MUFA and PUFA as a nutritional strategy for the prevention of chronic diseases. The role of dietary SFA and MUFA in cardiometabolic risk remains controversial in the scientific community.     Abstract: Over the last few decades, the Mediterranean Diet (MD), characterized by a high intake of vegetables, legumes, fruits, nuts, dairy products and non-refined cereals, a moderate intake of fish and poultry, and a low intake of red meat and sweets, has been recognized as a model for healthy eating. Indeed, adhering to the MD reduces the risk of metabolic and non-communicable diseases, including type 2 diabetes, metabolic syndrome, obesity cardiovascular disease and cancer. As an integral part of the traditional Mediterranean lifestyle, regular physical activity (PA) is also associated with a reduced risk of chronic degenerative diseases, even if results often vary according to different types, duration and intensity or volume of PA. The World Health Organization recommends performing moderate-intensity PA for ≥150 min/week, and vigorous-intensity PA for ≥2 days/week to have these health benefits. It is viable to hypothesize that promoting adherence to the MD along with PA guidelines might provide a more comprehensive endorsement to obtain greater health benefits, over and above those acquired separately by the MD and PA. Thus, the ongoing promotion and monitoring of the MD pattern, including eating habits and PA, is crucially important at all life stages. Potential topics may include, but are not limited to, examining the impact of adherence to the MD and PA on health in different life stages as well as on metabolic risk factors and subsequent disease outcomes

    Abstract: Diet plays a fundamental role in shaping the composition and metabolic activity of the gut microbiota and, thus, it could determine the interrelationship between the gut microbiome and the host. The colon is the part of the human body that is most densely populated, containing bacteria, archaea, viruses, and some unicellular eukaryotes that have co-evolved with humans in a commensal way. The gut microbiota plays a crucial role in the maintenance of normal host physiology. The rapid development of next-generation sequencing (NGS) methods for DNA sequencing in the last decade has facilitated in-depth study of gut microbiome composition and function. These methods have contributed to providing evidence regarding the relevance of the intestinal microbiota for host health as well as the basis for putative dietary interventions aimed at counteracting microbiota dysbiosis. Understanding the complex and dynamic interaction between dietary exposures and gut microbiota can help to elucidate their potential role in different pathologies and to guide future strategies for the prevention and treatment of diseases. Age-related changes in the gut microbiome are also associated with physiological changes in the gastrointestinal tract as well as in dietary patterns, with a concomitant decline in the normal function of the immune system that may contribute to increased risk of infection and frailty. More studies are needed to better understand how the microbiota shifts with different environmental factors and how they are associated with dietary changes

    Abstract: During the menopausal transition and postmenopausal periods, women are affected by a variety of symptoms, such as hot flashes, night sweats, vaginal dryness, depression, anxiety, and insomnia. Non-specific somatic symptoms are also common, including muscle and joint pain, tiredness, and dizziness. Some of these effects (particularly vasomotor symptoms and vaginal atrophy) are closely associated with estrogen deficiency, but the exact mechanisms underlying the other symptoms are not fully understood. Postmenopausal women are also at increased risk of cardiovascular morbidity as a net effect of central obesity, dyslipidemia, hypertension, and diabetes, as well as for osteoporosis, cognitive decline, and genitourinary syndrome of menopause. Hormone replacement therapy (HRT) has played a central role in improving menopausal symptoms and reducing the disease risks associated with estrogen deficiency. However, due to growing concern for the side effects of HRT, especially in patients with hormone-sensitive cancer such as breast and uterus cancer, research has turned to the effects of nutraceutical approaches to these symptoms and diseases. In breeding, molecular genetic tools (genomic selection and genome editing) can be used to increase production efficiency and fitness, especially immunity traits, or to characterize local genetic pools. The One Health approach, which requires a holistic approach, where genetics, nutrition, health treatment, and management need to be considered together, has gained ground in the poultry industry. The gut microbiome seems to be a good indicator of the balanced health of an animal. Artificial intelligence, built into robotic supervision and handling, helps to increase animal comfort and save costs in the workforce. Organic farming takes a different approach and faces different challenges. What could the possible answers be? We are facing a new era in poultry science.
