    Abstract: Childhood obesity continues to be a global problem, with several regions showing increasing rates and others having one in every three children overweight despite an apparent halt or downward trend. Children are exposed to nutritional, social, and obesogenic environmental risks from different settings, and this affects their lifelong health. There is a consensus that high-quality multifaceted smart and cost-effective interventions enable children to grow with a healthy set of habits that have lifelong benefits to their wellbeing. The literature has shown that dietary approaches play key roles in improving children’s health, not only on a nutritional level but also in diet quality and patterns. An association between the nutritional strategy and other lifestyle components promotes a more comprehensive approach and should be envisioned in intervention studies. This Special Issue entitled “Child Obesity and Nutrition Promotion Intervention” combines original research manuscripts or reviews of the scientific literature concerning classic or innovative approaches to tackle this public health issue.     Abstract: Sausages are privileged foods due to their diversity, nutritional value, deep roots in the culture of the peoples and economic importance. In order to increase the knowledge and to improve the quality and safety of these foods, an intense research activity was developed from the early decades of the past century. This book includes ten research works and a review showing important and interesting advances and new approaches in most of the research topics related to sausages. After an editorial of the Editor reflecting the aims and contents of the book, the initial five chapters deal with microbiological issues of the sausage manufacture (characterization and study of the bacterial communities of sausages, study of the metabolism and the technological and safety characteristics of concrete microbial strains, and use of starter cultures to improve the sausage quality). The crops included in this book are amaranth (Amaranthus spp.), quinoa (Chenopodium quinoa), kañiwa (Chenopodium pallidicaule), chia (Salvia hispanica L.), Andean maize (Zea mays L.), moringa (Moringa oleifera), yvapuru (Plinia peruviana), kurugua (Sicana odorifera), sacha inchi (Plukenetia huayllabambana), camu camu (Myrciaria dubia), mango (Mangifera indica), tarwi (Lupinus mutabilis), peanut (Arachis hypogaea L.) and taro (Colocasia esculenta), all of them still underutilized. Their cultivation is low; nevertheless, in recent years, the worldwide demand for some of them has increased immensely, resulting in an increase in their production. The ancient Iberoamerican crops have been widely recognized for their nutritional value by food scientists and food producers because they contain high-quality proteins and large quantities of micronutrients such as minerals, vitamins and bioactive compounds. In addition, they are gluten-free, which makes them suitable for people suffering from various gluten intolerances. This book summarizes the large amount of investigations in this field in the last year and provides knowledge within all the relevant areas of food science.     Abstract: The only effective and safe treatment of celiac disease (CD) is a lifelong, strict exclusion of gluten, the so-called gluten-free diet (GFD). As a consequence, strict adherence to the GFD is highly successful and useful to achieve optimal control of symptoms in celiac patients, although, sometimes, nutritional problems can persist despite a strict exclusion of gluten. However, following a strict GFD is not easy and an updated quality assessment of available products is needed for further improvement in gluten-free product development. Similar to CD, GFD is the common dietary approach in non-celiac gluten/wheat sensitivity (NCGWS). NCGWS is another common gluten-related disorder without the diagnostic features of CD. Increasing interest in the association and interaction between irritable bowel syndrome (IBS), functional dyspepsia, and gluten-related disorders can expand our knowledge and understanding of the management of these disorders. In this respect, GFD is considered a therapeutic option in IBS and functional digestive disorders. New insights into the GFD are an exciting scientific challenge for researchers

    Abstract: This Special Issue comprises articles related to the effects of genotype and processing conditions on the phenolic compound profile and antioxidant activity of cocoa-derived products, isolation and characterization of antioxidant compounds such as polyphenols and melanoidins from cocoa beans, and assessment of the antioxidant, antioxidative stress and anti-inflammatory effects of cocoa beans and cocoa-derived products. The results of these studies show that it is possible to maintain or increase the biological activity of cocoa beans and their derived products (cocoa powder and chocolate) by choosing appropriate processing conditions and cocoa genotype and origin. The papers published in this Special Issue confirm that cocoa beans and cocoa by-products can be considered as an attractive source material for manufacturing of functional foods and nutraceuticals. This is because they contain many bioactive compounds, mainly polyphenols, including flavonoids (proanthocyaninidins, monomeric flavan-3-ols, and anthocyanins) and phenolic acids, as well as melanoidins.     Abstract: The European Food Safety Agency (EFSA) has identified acrylamide as a public health concern due to its relation with the appearance of different types of cancer, and continued efforts are required to reduce exposure to acrylamide (EFSA, 2015). During the last few years, EFSA has maintained a high level of supervision to monitor the acrylamide levels in processed products, urging companies to implement effective mitigation strategies for reducing formation of this contaminant. Recently, the European Commission has published a regulation that sets mitigation measures for the reduction of this compound in foods, identifying new benchmark levels for a number of food categories (European Commission, 2017). The Regulation 2158/2017 compels food processors and food business operators in Europe to reduce the presence of acrylamide in their products, applying measures proportionate to the size and nature of the establishments.     Abstract: Gestational diabetes mellitus (GDM) is one of the most common adverse medical conditions that occurs during pregnancy, and its prevalence is rising as part of a diabetes pandemic. Nutrition plays a key role in GDM, whether (1) as part of an ‘unhealthy’ diet, which contributes to its cause, or (2) as part of changes in dietary intake, which act as the frontline treatment for GDM (sometimes supplemented with exercise and pharmacological intervention). Dietary changes, therefore, can alter the risk of developing GDM in the first place, and once GDM has emerged during pregnancy, dietary changes can mitigate the risk of developing GDM-related complications, such as macrosomia, respiratory distress, hypoglycemia and jaundice in the neonate, pre eclampsia, increased need for caesarean section and placental abruption in the mother.     Abstract: Adolescents in many countries consume poor quality diets that include high intakes of sugary drinks and fast food and low intakes of vegetables. The aims of this Special Issue on adolescent dietary behavior were to identify methods and approaches for successful interventions to improve diet quality in this age group and identify at-risk subgroups that need particular attention. In total, 11 manuscripts were published in this Special Issue: three qualitative studies that included a systematic review, five cross-sectional studies, and three quantitative evaluations of interventions. This Special Issue discusses the contribution of the studies and provides suggestions to improve the success of future interventions in adolescents. It is important that adolescents are involved in the design of interventions to improve social and cultural acceptability and relevance. Interventions targeting schools or communities framed within a larger food system, such as issues around climate change and the carbon footprint of food, may improve engagement. Targeting adolescents in areas of deprivation is a priority where diet quality is particularly poor. Potentially successful interventions also include environmental policies that impact the cost and marketing of food and drinks, although evaluations of these were not included in this Special Issue

According to the Food and Agriculture Organization of the United Nations, nearly 1.3 billion tons of food products per year are lost along the food supply chain, and in the next 25 years, the amount of food waste has been projected to increase exponentially. The management of food waste should follow certain policies based on the 3Rs concept, i.e., reduce, reuse, and recycle. Currently, most food waste is recycled, mainly as animal feed and compost. The remaining quantities are incinerated and disposed in landfills, causing serious emissions of methane (CH4), which is 23 times more potent than carbon dioxide (CO2) as a greenhouse gas and significantly contributes to climate change. These wastes are characterized by being an important source of bioactive compounds, such as phenolic compounds, dietary fibers, polysaccharides, vitamins, carotenoids, pigments, and oils, among others. These bioactive compounds are closely associated with beneficial effects on human health. These by-products can be exploited in different industries: in food industries for the development of functional ingredients and/or new foods or natural additives; in pharmaceutical industries for medicinal, healthcare, or cosmetic products; in agricultural industries as fertilizers or animal feed; and in chemical industries, among others.     Abstract: Plant-based diets contain a plethora of metabolites that may impact on health and disease prevention. Most are focused on the potential bioactivity and nutritional relevance of several classes of phytochemicals, such as polyphenols, flavonoids, carotenoids, phyto-oestrogens, and frucrooligo-saccharides. These compounds are found in fruit, vegetables, and herbs. Daily intakes of some of these compounds may exceed 100 mg. Moreover, intestinal bacterial activity may transform complex compounds such as anthocyanins, procyanidins, and isoflavones into simple phenolic metabolites. The colon is thus a rich source of potentially active phenolic acids that may impact both locally and systemically on gut health. Further, nondigestible fiber (prebiotics) are dietary substrates that selectively promote proliferation and/or activity of health-promoting bacterial populations in the colon. Prebiotics, such as inulin, raffinose, and stachyose, have a proven ability to promote the abundance of intestinal bacterial populations, which may provide additional health benefits to the host. Further, various pulse seed soluble (fiber) extracts are responsible for improving gastrointestinal motility, intestinal functionality and morphology, and mineral absorption. Studies indicated that the consumption of seed origin soluble extracts can upregulate the expression of BBM proteins that contribute for digestion and absorption of nutrients

This is supported by an expanding body of evidence from animal studies, human neuroscience, and brain imaging. Obese and overweight individuals also display patterns of eating behavior that resemble the ways in which addicted individuals consume drugs. Scientific and clinical questions remain: Is addiction a valid explanation of excess weight? Is food addiction a behavioural (i.e., eating) or substance (i.e., sugar) addiction, or a complex interaction of both? Should obesity be treated as a food addiction? Should we distinguish food addiction from other forms of disordered eating like Binge Eating Disorder?     Abstract: The sensation of flavor reflects the complex integration of aroma, taste, texture, and chemesthetic (oral and nasal irritation cues) from a food or food component. Flavor is a major determinant of food palatability—the extent to which a food is accepted or rejected—and can profoundly influence diet selection, nutrition, and health. Despite recent progress, gaps in knowledge still remain regarding how taste and flavor cues are detected at the periphery, conveyed by the brainstem to higher cortical levels, and then interpreted as a conscious sensation. Taste signals are also projected to central feeding centers where they can regulate hunger and fullness. Individual differences in sensory perceptions are also well known and can arise from genetic variation, environmental causes, or a variety of metabolic diseases, such as obesity, metabolic syndrome, and cancer. Genetic taste/smell variation could predispose individuals to these same diseases. Recent findings have opened new avenues of inquiry, suggesting that fatty acids and carbohydrates may provide nutrient-specific signals informing the gut and brain of the nature of the ingested nutrients. This highlights the importance of personalized nutrition strategies targeted at individuals with increased risk of disease and low selenium intake. The mechanisms by which selenium status, selenoprotein expression, and inherited genetic variations in the selenium pathway interact to affect molecular pathways involved in disease development are explored in human cohorts [2,3,5-7], and in animal [4] and in vitro models [8]. Furthermore, some reports identified novel potential biomarkers of disease risk and prognosis within the selenium pathway that could further our understanding of many chronic diseases [2,3].     Abstract: Food insecurity and low resources continue to be a burden influencing the health, well-being, growth, and development of millions of U.S. children and adults. Groups and individuals experiencing restrained access to food are our neighbors, individuals we may see each day, and individuals who we may not interact with or see because of their isolated situations. They include the elderly, those experiencing mental illness, veterans, certain race/ethnic groups, adolescents, young women with children, those living in rural areas, and those using food pantries, among others. Many of these groups, both hidden and visible, have rates of food insecurity above the national average that are resistant to national improvements in food security. Yet, attention to these subsets of the population is imperative to improve U.S. health and nutrition and to reduce rates of chronic disease. Many groups face specific barriers to maintaining sufficient food, for example, rural populations may find it difficult to access federal food assistance or other resources such as food pantries and nutrition education because of distance or lack of consistent internet access separating them from these resources. Further, their remote locations may make it difficult to obtain the types of foods that they prefer. Other specific barriers may include limited facilities and equipment for food preparation, access to culturally appropriate foods and preparation supplies, and foods that complement the foods that they already have. Tailored approaches to quantify access to food, the nutrition environment, dietary intake, and other barriers are necessary to build successful interventions and to quantify the needs of these populations

    Abstract: Salt (NaCl) is a key component of the human diet because it provides the sodium ion (Na+), an essential mineral for our body. Na+ regulates extracellular fluid volume and plays a key role in many physiological processes, such as the generation of nerve impulses. Na+ is lost continuously through the kidneys, intestine, and sweating. Thus, to maintain proper bodily balance, losses have to be balanced with foods containing this cation. The need for salt explains our ability to detect Na+ in foodstuffs: Na+ elicits a specific taste sensation called “salty”, and gustatory sensitivity to this cation is crucial for regulating its intake. Indeed, the widespread use of salt in food products for flavoring and to improve their palatability exploits our sense of taste for Na+. When consumed in excess, however, salt might be detrimental to health because it may determine an increase in blood pressure—a major risk factor for many cardiovascular diseases.
